"Take Rose-water or other water, the whites of two eggs and beat them and your water, then put in flour, and make them thick as you would do butter for fritters, then season them with salt, and put in so much sugar as will make them sweet, and so cast them upon your irons being hot, and roule them up upon a little pin of wood; if they cleave to your irons, put in more sugar to your butter, for that will make them turn."
Well, I make mine this way. But you will need a special wafer iron.

INGREDIENTS:
125 grams butter
1½ dl sugar
1 egg
1½ dl water
3 dl fine wheat flour
Melt butter, stir in sugar until it´s dissolved.. Add all the other ingredients. Grease the iron. Spoon 1 tablespoon of batter in the middle of the heated wafer iron, close securely but without forcing. Bake for half a minute on each side until lightly browned and lift out with a spatula. Roll up immediately into a trumpet shape or a roll open at both ends.
