I would say Judo is a good place to start. It will show u how to use ur opponents size and weight against him, free urself from his grip, and put him in a choke or submission hold. With knowledge of Judo, a 168lb. man can handle a 250lb. man. And u don't have to worry about breaking ur hands throwing punches. They more u learn and better u get, the less u will fear.

Pommac actually touches on something most people overlook.
It is important though- it isn't that an "angry person can't fight" they throw all thier know how out the window and become a "natural" fighter. Meaning all the skill and power generation and technique, generally go out the window.
Technique which can teach you to generate more power than you usually would through proper body mechanics.
You should learn a martial art and train against all sizes and stregths.
Find an art that teaches realistically with resistance. If you dont' even when you train against that bigger guy you won't know what it really feels like when he is using the full benefit of his weight/stregth advantage against you.
A fighter can take pain, but you need to learn to utilize more of what you do have. An untrained fighter wastes a lot of his power potential- they may be strong, but unless they learned to strike with thier whole body- then they are only using thier arms. Guarantee you you would be hard pressed to find someone who you can't squat more than they can lift with thier arms (to give an oversimplified example).
Whether you can take them with all the training still depends on the weight difference and stregth and size difference.
The simple truth is that the more the size difference, the more training you need, there does come a point where size does make training and technique less effective. Bob sapp is the perfect example- not skilled at all, it is solely his size that is what even allows him to step in and compete in the ring with trained pros (with less than desireable results in many fights), but the fact that he can compete and not be nearly as skilled as any of his opponents says something big.
The simple truth is the bigger the guy is than you, the better figther you have to be.
This is why man invented weapons, to account for this difference. Now lets say you are 150 and your opponent is 300, alone you have a problem, but if you have a knife and know how to use it- you have an advantage.

This is easy. Groin strike!Groin strike! Groin strike!He will not be that powerful with his nuts in his stomach. Or you could learn to run faster. There is nothing wrong with advancing tactically to the rear. If your opponent is as big and bad as you describe you better learn to be better( train harder) or stike strategically ( This is where the Groin stike comes in) or be faster( this is where the tactically advancing to the rear comes in). There is nothing wrong with living to fight another day.
If your looking for an art to help try something in the way of Hapkido. Hapkido means the way of coordinated power. This is about using the opponents force againist them. The bigger they are the harder they fall. Train hard.

Let's start with skill and speed. Are you fast with your hands or fast at running? Skill with the hand speed might be able to stop or defeat the opponent. Develop upper body strength and breathing techniques. Someone who answered before me (I forget which person) mentioned your mind set. Be prepared to beat the person down if you have to. No one has a right to manhandle any one. Period. End of statement.
Never mind your small stature-look at Bruce Lee (5'6-7"; 140-150 lbs)

You can always get out of a fight, I can because I can run faster than most people. There are some guys I have met that holds from normal people are useless because they are just to strong, guys that weigh like 250lb all muscle, guys like this don't mess with guys who weigh 168lb, so you won't have this problem , but if you do I guess you would have to attack everymans weakness, not his nuts because I've seen some guys who can handle a nut shot, but the eyes, no one can handle a finger in the eye, get that finger in deep enough like into the temple and it knocks there equilibrium off and it is extremely painful, that big *** dude will cry out like a sissy.

Fear is always there, for everyone. A man without fear is a fool.
Let me suggest some methods.
1. Use your cunning. You will first off need to form your resolve, that you want to hurt him. prepare yourself mentally for the fear and rehearse what you plan to do many many times in your mind and also some physical practice. Talk to him, try "convince" him you dont want a fight. He probably thinks you dont want to fight anyways, so he might be complacent and give away a weak spot, but make sure you have good acting skill. thats why rehearse. Get him to be vulnerable... perhaps grab his leg or pretend to go on your knees and strike his grojn. remebr the most vulnerable part of the groin is the scrotum area (most nerves, that is the middle to back area, the dangling balls. strike them with full fury), you will need to strike it like a volleyball, clean and well and with all your might. so aim well. but than again its your plan. your cunning. always have a plan B,C,D. rehearse them all. Groin strike only one suggestion.
2. Weak points. Many people have already beaten me on listing these points first. Pinky, neck, eyes, and our favourite is the groin. But plan on how to get to this position.
3. Fight with no abandon. He wants to hurt you so no point being nice about it. besides he will overpower you. So cant get out of his grip? judo aikido jujutsu take a while to master. this one everybody knows. I think you also know the amount of flesh and which parts are more painful when you bite. This can be a plan C.
4. Run and hit tactics. How good of a runner are you COMPARED to this mofo? you think of the feasibility of this option. Run let him chase you, and once a while when it is advantageous to you, turn around and fight, but keep running after that. cos if he isnt as good as you, he will get more tired. that is when he exposes himself to more mistakes. besides if he is so hell bent on chasing you his mind isnt working properly, that leaves you with a better chance of using your cunning. it also works after you hurt him some and he is mad, really mad, this is where you can run or just run and hurt him. again, be smart. know yourself and know your enemy.
5. try your best never to use weapons. you might do something you regret, or he may do something to you he perhaps wont regret if he can grab it away from you (he sounds stronger).
6. simplist attacks on him. you already know this.
all the best. and by the way, if you are keen on taking a martial art, to carry you beyond this and more and perhaps make some friends through martial art (so you got people who can assert yourself, i dont encourage or condone group fights. a fight for your pride is meant to be fought and won by you yourself. if you ask people to help you will start to doubt yourself) to give you confidence. I'm 5' 7" at 170lbs. Strike hard to the testicles...works every time. Even if he has your arms or has you in a bear hug, your legs are free. Invest in a large punching bag and practice your punches and knee jabs & kicks. Once he's stunned by the groin punch/kick, then attack the other vital points (throat, eyes, etc.). Sounds harsh, but if you genuinely fear injury & assualt, then you need to do what you need to do.

First off, most martial arts practitioners undergo not only physical training but mental too (did you not watch Karate Kid? Or Teenage Mutant Ninja Turtles?)
But seriously.
For street toughs with no real training it's almost impossible for them to be strong, large AND quick.
You could be quick and target general weak spots (groin, nose, throat, pinky finger...)
Or you could run, a battle not fought is not a battle lost.
