FRUITS are biologically synchronised 2 ripen as soon as the seeds contained in it are mature 2 be dispersed....
ethylene(a plant hormone)is producede in the wud be ripe fruits .......
this cause the accumulation of glucose and/or sucrose within the fruit body,makin it fleshy....again this in common terms is nothin but ripening
as such vegis dnt ripen.....howevr sum vegis dat u eat are nothin but fruits in biology.....!!
AND regarding rotting ....any biological substance having an organic origin,containin amino acids,glucose or fats are liable
to rotting,provided they dnt have protectiv measures to stop the agents dat coz rotting...
now the fruits n vegis u tokin abt must be off the shelf n not on the plants!?
coz as long as they are on the plants they wont rot bcoz of the anti fungal n anti biotic agents released by the plant.....
NOW U KNO WATS REAL FRESH!! HAS 2 BE 4M UR GARDEN...

They give off gases (ethylene) and if they are with other fruits and veggies that are also giving off gases they ripen too fast. Keep fruits separate from veggies to prevent it. Some things need to be room temperature and others needs to be kept cold. ethylene is secreted by fruits and vegetables undergoing senescene. it can cause rotting in other fruits also.
