Brown rice is supposed to be a little bit more chewy than regular. I cook it in my rice cooker all the time. Try adding just a bit more liquid. You can also mix in a little white rice to "lighten" it up.

Have you cooked it long enough and with enough water? It takes up to 45 minutes, compared to regular white rice at about 20 minutes, because of the extra bran coat. Cooking twice as long means more water is needed.

Here's a page that's all about the rice, and laid out nicely in grid form:

I cook brown rice on stovetop. Add same amount of water to brown rice and let it sit for 30min. before cooking, and then put on med. heat for 40min. and then let it rest for another 15 min, without removing the lid the whole time.

I love brown rice! A good rule of thumb is 2 cups of water for every 1 cup of brown rice. Whole grain wild rice is usually 2 1/2 cups of water per cup of rice. Barley (barley done in the rice cooker and then used as rice is a delicious change and very healthy) is 3 1/2 cups of water per 1 cup of barley.

All of those depend on your rice cooker and altitude, but those are a good rule of thumb.

I find that it takes double the time of normal rice to cook. (30mn)
