Mom , from Belgium, use to make this dark colored hard candy called ( and i don't know if i am spelling it right) speculaaus. I think i remember butter and brown sugar in a pan. Also that she spread it on wax paper, it got hard and then she would drop it or smack it. Anyone know how this is made?

Hi,

Speculaas is a very common kind of candy here in Belgium. We consume it mainly as a kind of cookie to soak in coffee but on holidays like christmas or easter there are 'specials' which are extra large or special flavoured.

The wiki for speculaas is http://en.wikipedia.org/wiki/Speculaas
A well known brand of speculaas is Lotus: http://www.lotusbakeries.com
imho, this recipe is kind of correct: http://www.joyofbaking.com/Speculaas.html

My mother also made this type of candy. I think she scorched the butter. It was a real treat when we were kids. Hope someone knows the answer to the question.
Sorry for the answer you got from C8.
