PRAWN AND CORN CHOWDER
2-4 servings
1 large onion
2 tablespoons vegetable oil
1 tin sweetcorn
600 ml chicken stock
salt and pepper
200 g peeled prawns
fresh coriander
3 ripe but firm tomatoes
1 lime - optional
Peel, halve and finely chop the onions.
Heat the oil in a large saucepan, then fry the onions over medium heat for about five minutes.
Add drained sweetcorn to the onion mixture and cook for another 10 minutes.
Heat the stock to boiling and add to the pan.
Bring it back to a boil, lower the heat and simmer for about 10 minutes until the corn is tender.
Season with salt and pepper.
Add the prawns and heat through.
If using raw prawns, heat until they turn pink.
Coarsely chop the coriander and tomatoes and add to the pan.
Adjust the seasoning with salt, pepper and lime juice.

Tapioca pudding is high in calcium and delicious when made at home.
1/3 C sugar
3 T Minute tapioca
2 3/4 C milk
1 egg
1 tsp vanilla
For chocolate tapioca pudding:
Increase sugar to 1/2 C, increase milk to 3 cups, and add 3 squares Bakers semi-sweet baking chocolate to saucepan before cooking.
Mix sugar, tapioca, milk and egg in saucepan; let stand 5 minutes. Cook on medium heat stirring constantly, until mixture comes to a full boil. Remove from heat and stir in vanilla. Cool 20 minutes; stir. Pudding thickens as it cools.
Cheese Quesadillas are high in calcium and you can do so many things with them.
1 c. mixed Cheddar and Jack cheeses, grated
1/4 c. drained, diced green chilies
(4 oz. can) Sour cream Salsa (optional)
You can also add re-fried beans, beans have calcium in them.
Place 1 of the tortillas in a large heavy skillet. Sprinkle 1/3 of both the cheeses and the chilies on top. Stack the second tortilla and add cheeses and chilies. Top with the third tortilla.
Cover and cook the quesadilla over medium-high heat until the cheese is melted, about 3 minutes, or until tortilla is crisped and golden brown. Flip and cook on opposite side for another 3 minutes or until crisped. Transfer the quesadilla to a cutting surface with a spatula and cut into 6 wedges. Garnish with sour cream and salsa.

spinach, broccoli, collard greens, butterbur, watercress, nopales, etc, dark greens are usually a good source of calcium. and of course milk and cheese, look on a recipe site for something like a casserole or a sort of vegetable cheese bake and combine these things, veggies and cheese are good! tofu is very high in calcium too.

You can add calcium to many regular foods (like casseroles, shakes, puddings, sauces, cereal) by adding nonfat dry milk.
