how do u make a 100% safe wine??

i want to make some wine to give to my uncle because he like wine and because i have a feeling im going to be bored in the summer and because im really interested in yeast and fermentation.

when i mean 100% safe I mean that it's safe to drink the wine, you get what I'm saying right??
