The best fish you can use in the U.S. for battered fish is Halibut, Walleye would be second. Get a pot and fill with oil,heat to temp, dip fish in batter,
cook til golden brown. Little healthier way is to do the fish in a dry batter(like pride of the west) and fry in a little olive oil.

any fish can be used for fish and chips, personally i like panfish like bluegill or perch, but you can also use cod or pollock

make a batter with drakes mix or something of that sort and beer, it should be relatively thick, coat your fish with it and put them in a pan with about an inch of very hot oil in it, cook until golden brown on both sides

as far as the chips go you can by waffle fries at your grocery and cook them according to directions

Fish n' Chips

Ingredients
2 Pounds Idaho potatoes, peeled and cut crosswise into 3/4-inch thick chips
4 haddock fillets (about 6 ounces each), cut in half lengthwise
Emeril's Essence to taste (optional but i use it and LOVE it!)
1 1/2 cups bleached all-purpose flour, sifted
1 tablespoon sugar
1/4 cup dark beer
2 large egg yolks, beaten
6 tablespoons milk
6 tablespoons water
salt and freshly ground black pepper to taste
2 large eggs whites, beaten to stiff peaks
vegetable oil for deep frying
malt vinegar
6 tablespoons fresh lemon juice

Directions

1. Soak the potatoes in cold water to cover for 30 minutes before frying. Season the fish on both sides with Essence.

2. In a mixing bowl, combine the flour and sugar. Add the beer, egg yolks, milk and water and whisk until smooth. Season with salt and pepper. Cover and let rest for 30 minutes. Fold in the egg whites.

3. Heat 6 inches of oil in a deep, heavy pot or an electric fryer to 360 degrees F. Dip the fillets in the batter, letting the excess drip off. Add the fish, several pieces at a time, and fry until golden brown, 4 to 6 minutes. Drain on paper towels. Season with Essence and keep warm.

4. Drain the potatoes and pat dry. Place them in a fry basket and fry in the hot oil for 3 minutes. Lift the basket out of the oil and drain over the fryer. Return the basket to the oil and fry until golden brown, another 3 to 5 minutes. Drain on paper towels. Season with salt and pepper.

5. Serve the fish & n' chips on newspaper and drizzle with the vinegar and fresh lemon juice. Pass the tartar sauce.

Use a white fish without bones such as Cod and use a beer batter mix that you can get at your local grocery store.Just follow the directions on the box.

Blue grendier is a nice white boneless fish that is available in Australia. get good potatoes and double cook them - blanch them in oil the first time and then cool and recook in oil for a cruchy texture or what I do is par boil potatoes and cut them into small pieces - cool them and cook in hot oil
