A good example of what I know is that some of it can go back to the department to help purchsing equipment for the department itself --- Pontoon Beach, IL. I cant remember exactly but it was kinda like this... A police officer found a semi truck abandoned with MILLIONS of dollars in it... several officers counted and compaired notes then turned it into the Illinois state commission. Now The Pontoon Beach Police Department has new vehicles that were badly needed and a new mobile comand center.

It is put into the property room to go into evidence for all court cases. If an officer keeps cash and you have witnessess then turn him/her in for theft, but make sure you have the information to back it up.

Alot of them keep it if they can get away with it, or split it between themselves after the Bust or the person goes to prison. However, The legit ones turn it in to be cataloged and locked into a safe until disposition of the reason they took it.
