I have several suggestions. I've tried all of these and they all worked on my two dogs.
Don't use these at the same time, but switch off from time to time.
Avocado slices.
Small amount of flax seed oil, also food for joints etc.
Salmon oil sold in pet food stores. Choose a good brand.
Small amount of olive oil.
Canned fish as a treat. Small amounts at a time.
Be careful not to give your dog large amounts of oil at once. A little bit each day will give a great luster to the coat.
Natural diets also promote excellent skin and coats.
Search in Yahoo or Google for raw diets for dogs, sometimes called BARF diet (bones and raw foods, I know, ugly name LOL)
There are also some great Raw Food groups in Yahoo Groups. Join us! The raw diet takes care of the dog from the inside out. Including the coat!

Today there can be salmonella in raw eggs I always cook mine before giving to the dog. Wild Alaskan Salmon Oil Omega 3 is a wonderful dog food supplement for dry skin and shiny coat. The bottle comes with a pump and tells you how much to put on food, according to dog weight. Certain vegetable oils can clog veins, just like humans.

I wouldn't use bacon grease - it can upset their stomachs and could even cause pancreatitis. I also wouldn't recommend giving a dog any raw food due to bacteria. There's also something called a 3V capsule that has fatty acids and vitamins in it. It comes in a capsule or a pump to put on their food. If those are too expensive then fish oil capsules work for some dogs. Also some foods are specially formulated to promote healthy coats.

The best diet is the way to a healthy coat, you should feed your dog the best food you can afford. A supplement of Omega oils will help. A little fresh meat is good too, it contains amino acids which gives healthy skin and coat.

I went to the vet to ask what I should use to keep my sheltie/terrier's very long coat healthy and shiny. She gave me a bottle of Derm Caps Liquid. It was $17 for about a year. It's really not bad, and you just pump a little bit on the food. It works great. I looked online and you can buy it much cheaper on several pet websites. It also says it works on several skin conditions such as dandruff.

You can feed him raw egg in a little milk. My dogs love this treat. Their coats are very shiney.

I have to agree with the bacon grease answer, but you can also buy vitamin E pills and poke them and squeeze out the insides onto the food. Again, that can be expensive, but I bred labradors for years, and they love that bacon grease, just save it in a jar after you make bacon or ground beef, and keep it in the fridge, you can reheat it on the stove, just enough to coat the food, don't overdo it.

We used to pour a little bit of bacon grease on our dog's dry food. I have no idea if it is still suggested though.
