I'm doing a research assignment, and I'm just wondering how over a 7 day period, how does processed milk (pasterised and homogenised) like off the shelf, would decompose over a 7 day period.

Well, at room temp, the baceria present (no, pasteurization doesn't kill ALL of them), really begin to grow and multiply. Dpending upon the bacteria, they can give off waste products (like alcohol) and/or toxins as they digest the milk sugar.

At room temp, the proteins are denatures and the milk will clabber. Once proteins are denatured, they are unstable and decompose.

In the fridge, however, very, very little (if any) of this is goin on.

Once the seal is broken and the milk is exposed to the air certain bacteria present in the air will be introduced and will begin the process of breaking down the milk. Exposure to heat and light will also contribute to the process.
