You are confusing the fact of the different animals and the application of which to consume. The "clean and unclean" animals were existant since they were created and were what they were, and which were which was apparently told to Noah. Much later in the desert God commanded about the application - which you may eat and which not.
Not being Christian I have no clue if you believe that you should follow the laws of Kashrut but regardless of the matter, God did not specify health warnings along with the consumption of the "unclean" animals - although they may be the reason, or one of several reasons. It may just be for mystical, spiritual reasons.

You're right these health laws are for all of us!
Is shrimp or pork bad to eat?
First of all they are scavengers. If you go back in the Old Testament; God distinguished what foods we should eat and which one's we shouldn't. Now if you decide too; that's your choice, but some groups don't because it's an abomination to eat anything unclean. Isn't our body the temple of God as stated in 1Cor.3:18-19? We supposed to take care of our body and be in good health (3John 1:2).
Shrimp are made to eat the garbage under the sea floor; they carry diseases too. The pig is a scavenger too; it eats the slop on the earth and if you looked under a microscope of cooked ham; you will find worms in it. You really want tricinosis and diseases and things in your body?
** TEXTS THAT INVOLVE THE CLEAN AND UNCLEAN MEATS:
GEN.18:7-8; EXOD.16:12-13; LEV.11; 20:25; DEUT.14; ISAIAH 66:17; EZEK.22:26; DAN.1:8; MATT.3:4; LUKE 24:41-43; ACTS 10:10-14; 1COR.3:16-17; 9:27; 2COR.6:17; AND REV.21:8.
----IF THE CLEAN AND UNCLEAN MEATS WEREN'T VALID FOR TODAY; THEN WHY OH WHY WOULD THE LORD PLEAD WITH FLESH NOT TO EAT UNCLEAN MEAT--(ISAIAH 66:15-17). ALSO NOTICE DEUT.14:4 "SHALT NOT EAT ANY ABOMINABLE THING" AND REV.21:8 "...THE ABOMINABLE SHALL HAVE THEIR PART IN THE LAKE WHICH BURNETH WITH FIRE AND BRIMSTONE: WHICH IS THE SECOND DEATH."

You must also remember that the Jews had just spent 400 years in a pagan country as slaves and had to have forgotten the original dietary laws. When God brought them out of slavery through Moses, all the laws had to be given again. Not just dietary but sacrifice, sin and health laws as well as civil justice laws. The Jews of that time were quite ignorant of how they were supposed to be different and holy to the Lord. They were kind of like the modern Iraqis, now they are free from tyranny , but don't know what to do to govern themselves. However, in Acts, 10:9-23 we see God giving permission to eat unclean things to Peter as a way of preparing him for the expansion of the church to the gentiles. He said "do not call anything impure that God has made clean. Hope this helps.

Sure, Noah understood which were kosher and which are non-kosher animals. How else could he have followed the command you quoted from Genesis 7.
As far as diet goes, the only food-law contained in the Torah for non-Jews is to not eat the limb of a living animal.

I do believe that God has told people the healthy way to eat. He was especially protective of the Jewish people because Jesus was to come through them. And therefore they are His chosen for that reason.
Also, in Bible times, there was no refrigeration or ways to preserve foods.
The actual laws were for the people of the Old Testament. New Testament Christians are not under the laws recorded by Moses.
We do follow the ten commandments (all except keeping the Sabbath Holy) because Jesus said that He has come to fulfill the law, not to destroy it. We are not justified by the law. We are justified by Jesus' death on the cross.

Non-Jews are also forbidden to eat eiver min ha-hai.
Jews believe that Moses received the entire Torah on Mt. Sinai.
Atheists ascribe its sources to humans. Needless to say, Judaism (see Pereq Heleq) regards this as a VERY serious sin.

All societies have "dietary laws". The Jews and Muslims are very similar as they both claim descendancy from Abraham and these dietary customs are passed down generation by generation.

I suppose you don't recall the vision that Peter had that is described in Acts. Where a sheet comes from the sky and it is filled with all sorts of unclean things that we are now free to eat.
