Wild salmon baked at 350 for 20 minutes and placed on top of orzo (rice shaped pasta) cooked in chicken broth.
When the salmon is wild (not wild caught or farm raised), the natural flavor is strong enough so it won't need any butter, spices or sauces.

For fresh salmon there's nothing better than grilling it. Spray the grill grate with cooking spray (not while over the coals). Rub some butter on the salmon. Season it with your favorite herbs, then place skin side down on the grill. Cover it and let it cook. Take a good spatula and take it off the grill. I usually leave the skin on the grill because I don't like it stuck to my salmon anyway. I clean it off later. I serve it with rice and vegetables. For canned salmon I make salmon cakes. Zatarains makes a really good salmon cake mix. You could use either their tuna cake or crab cake mix as well. They are about the same.

I will do one of two things with salmon, i will put butter on it and then put garlic on that then grill it on my george forman till it breaks easily with a knife. Otherwise put the oven on 400 and put it in there for 20 min meanwhile take some asparagus (cooked, boiled for about 10 min), a tsp of oil (i use extra virgin olive oil) and 2 cloves of garlic crushed and a little bit of onions for a few minutes saute it on the stove then after the salmon has cooked for 20 min take it out and lightly cover the salmon cutlet with dijon mustard (optional i dont like mustard so i dont do this part) and then put the asapargus mix ontop and cover with cheese and put in oven for another 5-10 min. it is good.

I'll take a Salmon Steak, a little salt, pepper and a dusting of flour which gives it a slight crust when it's grilled. For a sauce, either Tartar Sauce or a mixture of a Tabasco type hot sauce with lemon juice and or vinegar.

Salt, pepper, lemon juice on Salmon - cook until slightly flaky in the oven with a little white wine.
Top with Hollandaise sauce you make yourself.

For canned Salmon, I buy the skinless & deboned. Drain, add chopped onions, 1 beaten egg, and saltine craker crumbs. Fry in oil until browned. This tastes awesome...my favorite meal when I was growing up...actually still is, whenever I have time!!
