As in, people from London can be referred to as a Londoner, people from Minnesota a Minnesotan - do the words/terms I'm looking for exist? (crossing my fingers)

Essexer, Wessexer, Sussexer are the common terms employed.

When England was ruled by the Saxons about 1000 years ago it was split into 7 regions. East Saxon, South Saxon and West Saxon were three of those areas and became known as Essex, Sussex and Wessex.

Essex and Sussex survive to this day more or less as they were in Saxon times.

Wessex was a large area extending from Cornwall to London and today is spilt into several smaller counties. Wessex is a historical area brought back to prominence by the novelist Thomas Hardy and more recently when Prince Edward was given the title of Earl of Wessex upon his marriage to Sophie Rhys-Jones, a title that hadn't been used for about 1000 years.

As with most counties in the UK there is no name for people from these areas although in the past the term 'Calfs' was sometimes given to people from Essex, this stems from the high standard of beef cattle that were reared there.

Essexer, Wessexer and Sussexer aren't correct terms although if you were to use them people would probably know who you were referring to.

Sussex? there's a choice based on history.
Firstly http://www.peoplefrom.co.uk gives the demonym "Sussaxons." - obvious!
But there are also very old, more glamorous, options, the best of which are.
Wends/Wiltes - from their Jutish ancestors from the Vandal lands on the Baltic & whence came the area name "The Weald" and placenames like Wilmington, Willingdon, Winchelsea.
Astings - also a Gothic name for the Baltic settlers right across the county, hence the county's oldest known town "Hastings"
There are more, mostly based on towns rather than the tribal settlers, but those are a few to be going on with.
