You can alter the color profile of most digital cameras, but I prefer to do this in Photoshop Elements, which is what I use. You can increase the entire spectrum or single out individual colors.
This is not a "great" photo, but it benefited from some increased saturation in the red and magenta spectrum.

Here's one where I goosed up the barn roof on this overcast day. I think I gave the sky a little more blue in its own adjustment layer, too. It was a rather gray day.

Check your camera manual and see if it will allow you to increase the saturation. Most cameras will allow you to do this, and this will make your colors more vibrant. If you can't do it in the camera, use whatever software that you use for post processing to increase the saturation. Just about every package will allow you to do this basic enhancement to a photo. This will make the colors more vibrant, but don't over do it! Good luck.

Edit your photos.
Or, it could be your camera. I have a regular digital camera, and I have an SLR camera, and the pictures I get from my SLR are so full of color, and alot more detailed. What is the megapixel of your camera? What kind of camera is it? Is it grainy at all?
