I think onion. In Asian cooking, ginger and garlic are often used to counter-balance each other. I think cinnamon is dessert spice in a similar flavor range with ginger. So to pick a flavor in a similar flavor range with garlic, I thought of onion. On the other hand, if you got a mouthful of cinnamon and it was very hot, and you wanted an antidote, I think drinking milk would be your best bet.

I'm going to say salt just because cinnamon is sweet so I'm guessing if the opposite of sweet is salty so I'm guessing........... salt!!!
