Similar to spinach artichoke dip, but souffle i/o dip.

That's not a souffle. there's not even any eggs in it.

Here's one from the recipelink site.

I cheat and use the Crescent rolls from Pillsbury if I don't have time to make them from scratch.

PANERA BREAD SPINACH AND ARTICHOKE EGG SOUFFLE

2 packages crescent roll dough (or dough from home made croissant recipe)
6 eggs, separated
1/2 cup defrosted spinach, well drained and fluffed
1/4 can plain artichoke hearts, drained, cut in small pieces.
1/4 finely diced red bell pepper
shredded cheese (5 cheese blend)

Preheat oven to 350 degrees F.

Roll out crescent roll or croissant dough to a 6 inch square. Line 12 ungreased muffin pan cups or 6 individual souffle pans with dough.

Combine egg yolks, spinach, artichokes, and red peppers; set aside.

Whip whites to soft peaks. Fold into spinach mixture.

Spoon in egg mixture into dough lined cups or dishes. Top each with 2 tablespoons or more of shredded cheese. Fold over dough to cover completely.

Bake in a preheated 350 degree F oven for 30 minutes. Let stand for 10 minutes so egg mixture is not runny.

ARTICHOKE SPINACH CASSEROLE

3 drained jars marinated artichoke hearts
2 pkg. Stouffer's "spinach souffle", defrosted
2 sm. cans Aunt Penny's white sauce
1 1/2 c. shredded Cheddar or Monterey Jack cheese

Layer in casserole in order. Bake in oven uncovered at 350 degrees for 1 hour and 20 minutes.

Ingredients:
2 jars (6 oz. each) marinated artichokes
3 pkgs (10 oz each) frozen chopped spinach
3 pkgs (3 oz. each) cream cheese (I use light cr.cheese)
4 T. margarine
6 T. milk
1/3 C. shredded parmesan cheese

Directions:
Drain marinade from artichokes. Set aside a few for garnish. Put remainder over the bottom of 1.5 qt dish. Squeeze moisture from spinach and arrange evenly
over artichokes. With mixer, beat cr. cheese and margarine until smooth and fluffy. Gradually blend in
milk. Spread over spinach, sprinkle with pepper, dustwith parmesan.
Bake at 375 degrees for 40 minutes or until lightly browned
