Maybe try adding a little white wine to the alfredo sauce (1/4 - 1/2 cup) other ideas include shredded crispy bacon , garlic with a generous sprinkle of parmasan on top served with crusty garlic bread and a glass of red wine.

I just got some fresh razor clams from my brother and I'm going to add large chopped clams into the alfredo sauce along with sauteed onions, mushrooms, garlic, thyme and frozen peas over the fettuccine.
Also finely minced lemon zest and grated nutmeg over the top as garnish as the citrus helps to cut the creamy alfredo sauce.

Seafood, such as shrimp, scallops, and salmon, is great in Alfredo sauce. I have used tuna (canned) and found it too heavy. I usually put in a green vegetable for taste and color. Broccoli is a favorite of my family, but peas are easy and very colorful if little red pepper strips are tossed in.
Don't forget to use your holiday turkey in this dish!

i was really nervous when i tried this but asparagus and salmon. My husband hates aspargus and he loves this its probably one of his favorite dishes, i used the boxed grilled salmon and fresh asparagus, the canned stuff is way to soggy and is horrible tasting where fresh is crispy. i boil the asparagus for about 10 min till its firm but still soft and cooked and then i take the salmon break it apart and in a dish i mixed the salmon asapargus and just store bought alfredo sauce. its good but leftovers are a no no. they are not good so i wouldnt try the leftovers.

That's about all I've ever heard of going in it and that's about all I like. However you could throw in some broccoli maybe some carrots and a variety of peppers. Shrimp is awesome, as others have pointed out and you could do both chicken and shrimp.

Green peas, ham bits, scallops, shrimp, Chachere's Creole seasoning (I use this all the time for everything but I am Texan)
Jalapeno pepper bits or dried red pepper bits
I love it with spinach and dried red pepper, also I put sliced green olives sometimes and you can put almost anything.
