Brown a pound of lean ground beef, turkey or chicken in olive oil. Add chopped onions and garlic and some taco seasoning or cumin and Gebhardt's Chili powder - let the meat and onions cook slowly so the spices develop in the oil.
Add 1 can Re-fried Beans or 1 can pinto beans (refried beans are the best. Mash the meat and beans up.
You already have tortilla chips with melted yellow cheese and sliced Jalapenos so put this on them/
You can use some of this and also use the rest for tacos.
You can put on top of nachos in dabs and also then strew chopped avocados with a little lemon juice salt and pepper. Put dots of sour cream and slices black and greens olives.
In Texas Nachos are a meal.

I dont make a topping. I brown the hamburger with oinion and
chipotle tabasco sauce then I add a cup of water and let that boil off. It makes the meat very soft and crumbley. Then I add the meat with the cheese and a can of rotel. That is diced tomatos and chili peppers. I just keep it in the crock pot until it's ready to eat. My kids would eat this every day if I would let them.

Adding sofrito or recaito to the meat while cooking will make a great flavor. You can find it in the frozen food section in most supermarkets.

to switch up, try grilling then chopping chicken breast
if grilling isn't an option, boil the chicken with chopped onions and pepper, then shred the chicken once cooked
Grilled and chopped carne asada is great as well

try chpped fajita meat. i use fiesta brand fajita seasoning, and grill them with bell pepper and oinon. (of course, you need garlic too, and leave the bell pepper out of the nachos if you want)
