Mine just came out of the oven and it is tender. I'm gonna have asparagus and red potatoes ! Yummy yumo. Better late than never, I had to work yesterday.

I had Corned Beef with cabbage, potatoes and carrots, a good old fashioned traditional Irish meal.

I did the Grand boil with cabbage, carrots, potatoes, onions, turnips. I make a sauce of horseradish, mayonnaise, grainy mustard and a little sour cream since I am from Texas I add chopped Jalapenos. Sometimes I put parsnips into the boil but it is hard to find them down here (I was raised in the North but born in Texas and I came back to retire)

I like my corned beef with mashed potatoes, carrots and cabbage covered with hot mustard sauce.

I cooked one today too. With red potatos, carrots, cabbage and garlic bread. Awesomely good. Hope you enjoy yours too!
