What can i make the nucleus of my plant cell project out of?

Ive tried apples, potatoes, everything is too small and will rot quickly. Any other ideas??

If you want to keep it all plants you could use a pumpkin (they come in all sizes) or you might find a gourd that is the right size and shape for you, Either would keep long enough for your project. Or you could take a large orange and disinfect it with a bleach solution or peroxide and then spray it with a clear shellac and it would keep long enough. Good luck, it sounds interesting.
