I'm trying to find a gift, or make one for my girlfriend that has something to do with horses. Any ideas would be really helpful!

You can take her to a rodeo or horse show;
there are several "western" quilt kits on the market (you buy it and put it together);
If she has a deceased horses hair, you can have a bracelet or necklace made from it (depending on length available) from PonyLocks.com;
you can muck her stalls for her and feed them; how about sculptures or paintings;
a nice coffee table book with beautiful drawings; take her horseback on a beach or on a trail;
do a dude ranch trip;
make a CD that has songs on it about horses...

A little horse plushie or keychain! Anything with a little hoof print, or things like that. Mabey get her a little t-shirt, or make her a horse card online! If it's something romantic, she'll fall head over heels for it.

take her out on a trail ride!! that could be so romantic. or if you want an actual gift, you could get cute horse jewelry. or make a card with a horse on it, if it's bad that would be so cute!! haha. just look around at the local saddlery, or online ((http://www.backinthesaddle.com/)). good luck!

I don't know, I'd probably wouldn't get her something to do with horses myself. Never know what she'll like, so best to play it safe and go with chocolates or a dvd you know she'll like. Maybe take her shopping and let her pick something out, then at least you can be sure that she'll like it.

find out if she wears jewelry if she does there is no doubt she will like a little charm bracelet with a horse and horse rinding accesories on it.
