It depends on if you can get edge and base tiles to match the field.
Edge tiles are the front 1 or 2 inch tiles where your belly would touch the front of the counter top. base tiles are the ones that flare out at the bottom to ensure water drips away from the horizontal and vertical joint. (the field is the tiles you use for the counter top).
If this is the case, start with the edge tiles, work towards the wall and cut the tiles that abut the wall. Then grout. Next apply the base tiles, work up towards the cabinets and cut to fit. Grout.
If those special tiles are not available, you will have to use an edge (most commononly wood), cut tiles tight at the walls, grout and then apply the backsplash.
One last thing, use quick set tile adhesive and unsanded grout.
