Any ideas?

What cheeze is included in the white kinds?
At a place called Blue Mesa...theirs is white and it's the best!
I appreciate any help.

¼ diced yellow onion
¼ cup poblano peppers, roasted, peeled, seeded and diced
2 TB. minced serrano pepper
½ tsp. cumin
½ tsp. granulated garlic
1 cup whole milk
1 cup heavy whipping cream
1 lb. white American cheese*, cut in small cubes

I use Monterrey jack - pepper jack it you want it to be a little spicy. Brown chopped bell peppers and onions, make a white sauce and add the jack cheese, onions and peppers. A bit of salsa verde is nice to mix in.

You can also use white cheddar, provolone, or Munster.

This isn't the white kind, but its easy and good. Cubed velveta and rotel tomatoes(the canned stuff). Nuke it and add milk if needed!
