By eating only fruit and vegetables you are not getting all your nutritional requirements. So you may initially loose weight but it's definitely not a good way to do it, as your more likely to be loosing muscle than fat. Plus fruit is extremely high in sugar which is something you try and avoid in excess if trying to loose weights.
Re fat: Some fats are actually good for you and your body needs these fats. Some fats, e.g. olive oil and avocados actually curb apettite so make sure you include one good fat in your salads.
Your body fat percentage would increase because it's unlikely you would get enough calories through eating only fruit and vege, therefore your body would start storing fat and burning muscle in order to survive.
Exercise is not only an important part of loosing weight but also and important part of any healthy lifestyle! You need to do it regardless of whether you want to loose weight!

The best way to lose weight is combine diet and exercise. Salads are good every once in awhile but your body needs protien (meats) as well. The healthiest meat would be fish or chicken. My advice (from personal experience) would be breakfast - yogurt and 2 cups of cereal (special k strawberries is what I use) and skim milk, if you get hungry before lunch try baby carrots, or sugarfree gum can supress an appetite to some degree, for lunch have a salad no croutons and fat free dressing with fitness water, then dinner have a chicken breast with a side salad and fitness water and maybe applesauce or something like it.
Also working out before dinner causes you to lose the most calories (dunno why but thats what I have been told), and skipping breakfast is actually not good for a diet.
Another thing you could try would be having a dinner for breakfast and breakfast for dinner if that makes sense

I lost 105 pounds in 6 months. Here is how I did it.
1. Every morning get up and walk for 45 minutes. You can start with less time, but you want to get up to 45 minutes, and it must be fast walk. You want your heart rate to go up. It must be in the morning, it kick starts your metabolism.
2. I cut out Red Meat, and fatty foods. Boneless skinnless chicken breast, baked, or grilled, rice and vegetables (steamed).
3. Eat half. Just eat half of what you normally eat. Put 1/2 on your plate, and put the rest away. Cook less. When you go to fast food, get salads only. Or grilled chicken. No fries, only diet soda. Or water.
It will work, once you get into a routine, you will get hooked on the results, and you will keep the routine. It has been over a year for me.
Also start counting your calories. Write them down. You would be amazed as to how much more aware you are of your caloric intake, if you actually write it down. We recently discovered a site that offers a great program that counts calories, as well as keeps track of everything. It allows multiple users, so everyone in the family can keep track. They offer a free 7 day trial, and so far I am very impressed with the product. Try the 7 days and see. It allows you to add the exercise that you do during the day, which increases the amount of calories you can take in. Very Cool!!

You need to keep your diet balanced. The food pyramid was created to help people get everything they need for there bodies. If you ate just salads. Then lose or cut the fat out. Your body would go in to its natural defense and store any fat that you couldn't avoid increasing your mass or weight. Your body thinks it is starving. So the best thing you can do is stick to the pyramid and exercise.

Losing weight is a simple equation: if you burn more calories than you eat, the weight will come off. Start off by estimating how many calories you burn each day using the calorie calculator http://straighthealth.com/pages/tools/caloriecalclb.html This will give you an idea of how many calories to eat. Healthy weight loss is 1-2 pounds per week. To lose 1 pound per week you need to create a calorie deficit (burn more than you eat) of 500 calories per day. To lose 2 pounds a week, you have to double the deficit to 1000 calories per day. You can achieve this by eating less, exercising more or a combination of both.
