sure you could, i would add a little cranberry juice to make it taste alitte more like cranberries.

Cranberry Walnut Crumb Cakes
Cake:
8 tablespoons unsalted butter (1 stick), at room temperature, plus more for the pans
1 cup granulated sugar
3 eggs
2 cups sifted all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup sour cream
1/2 cup dried cranberries, cherries, or raisins
Topping:
3/4 cup light brown sugar, packed
1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
2 tablespoons cold unsalted butter, cut into pieces
1 cup coarsely chopped walnuts or pecans
Equipment: A few 4-ounce cup muffin pans; ribbed paper cupcake liners
Make the Cake. Preheat the oven to 350 degrees F.
Line the muffin tins with paper liners.
In a mixer fitted with a paddle attachment (or using a hand mixer), cream the butter until smooth. While the mixer is running, slowly add the sugar. Add the eggs one at a time, waiting for each to be incorporated before adding the next, and mix until light and fluffy.
Sift together the flour, baking soda, baking powder, and salt. Working in batches, add the flour mixture to the butter-sugar mixture, alternating with dollops of sour cream. Mix in the cranberries. Pour or spoon the batter into the prepared tins, filling them no more than 3/4 full.
Make the Topping: Combine the brown sugar, flour, and cinnamon in a medium bowl. Add the butter pieces and, using your fingertips, pinch the ingredients together into a sandy, crumbly mixture. Add the walnuts and mix. Sprinkle the mixture over the cakes.
Bake until risen and browned, about 20 to 25 minutes. Let cool 10 minutes in the pan.

I am a big cranberry fan.
I would mix your cake with a little orange zest and stir in some cranberry jam. Then when the cake is done you can put jam in between 2 layers and top with whipped cream.
Of course, I have some other cranberry recipes you might like!

1/2 cup orange juice

2. Grease a 12 cup muffin pan.
3. In a bowl, stir together cranberries, 1/4 cup of the sugar, and orange peel.
4. In a larger bowl, sift together flour, baking powder, salt, and the rest of the sugar.
5. Add oil, orange juice, and eggs all at once to the flour mixture and stir until moistened.
6. Fold in sugared cranberries and nuts.
7. Pour batter into muffin pan, evenly dividing batter between cups.
8. Bake at 400F for 20-25 minutes or until golden brown.

2 1/2 cups all-purpose flour
1 cup sugar
2 teaspoons baking powder

2 large eggs
4 tablespoons butter, melted
2 cups fresh cranberries or frozen cranberries, coarsely chopped
1 cup walnuts, chopped (optional)
1. Preheat oven to 375 degrees F.
2. Grease a 9x5 inch loaf pan and have it ready.
3. In a mixing bowl, mix together flour, sugar, baking powder, baking soda, and salt.
4. In another small bowl, beat eggs lightly with a whisk or fork, then stir in melted butter, orange peel, and orange juice.
5. Add the wet mixture to the flour mix, and stir with a spoon until the batter is just mixed, then fold in the cranberries and walnuts (batter will be stiff).
6. Pour the batter into the loaf pan and bake in the preheated oven for 55-60 minutes or until a toothpick inserted in the middle comes out fairly clean (a crumb or two can stick to it but you don't want wet batter).
7. Cool in the pan on a wire rack for 10 minutes, then remove from the pan and finish cooling on the wire rack.
I have some other cranberry recipes as well. The one for the bread machine (comes in 2 different sizes) is really nice and has a pretty pink colour. If you can't find the exact jam try to use a low sugar one with either cranberry, raspberry, or mixed. This makes wonderful toast! Especially with English marmalade.

It wont taste much like cranberry. It'll be more like a yellow cake with cranberries in it.
