Laura Bush's Cowboy Cookies

3 cups flour
1 tablespoon baking powder
1 tablespoon baking soda
1 tablespoon cinnamon
1 teaspoon salt
3 sticks butter at room temperature
1 1/2 cups white sugar
1 1/2 cups packed light brown sugar
3 eggs
1 tablespoon vanilla
3 cups semisweet chocolate chips
3 cups old-fashioned rolled oats
2 cups sweetened flake coconut
2 cups chopped pecans (8 ounces)

Preheat oven to 350 F.

Mix flour, baking powder, baking soda, cinnamon and salt in bowl.

In 8-quart bowl, beat butter on medium speed till smooth and creamy, about 1 minute. Gradually beat in sugars and continue beating to combine, about 2 minutes. Add eggs, 1 at a time, beating after each.

Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans.

For each cookie, drop 1/4 cup of dough onto ungreased cookie sheet, spacing 3 inches apart. Bake 17 to 20 minutes, until edges are lightly browned. Remove to rack to cool.

Makes 3 dozen large cookies.

Championship Chocolate Chip Bars

Source: HERSHEY'S

1-1/2 cups all-purpose flour
1/2 cup packed light brown sugar
1/2 cup (1 stick) cold butter or margarine
2 cups (12-oz. pkg.) HERSHEY'S Semi-Sweet Chocolate Chips, divided
1 can (14 oz.) sweetened condensed milk (not evaporated milk)
1 egg, slightly beaten
1 teaspoon vanilla extract
1 cup chopped nuts

Heat oven to 350°F.

Stir together flour and brown sugar in medium bowl; cut in cold butter until crumbly. Stir in 1/2 cup chocolate chips; press mixture on bottom of ungreased 13x9x2-inch baking pan. Bake 15 minutes.

Combine sweetened condensed milk, egg and vanilla in large bowl. Stir in remaining 1-1/2 cups chips and nuts. Spread evenly over hot baked crust. Bake 25 minutes or until golden brown. Cool completely in pan on wire rack. Cut into bars. About 36 bars.

These cookies are really good and really easy!!

Double Chocolate Drops

1 3/4 cups all purpose flour
3/4 cup granulated sugar
1/2 cup milk
1/2 cup butter, softened
1 teaspoon vanilla extract
1/2 teaspoon baking soda
1 egg
2 squares unsweetened chocolate melted


Preheat oven to 400 degrees. Into large bowl measure all ingredients, beat at low speed just until blended, scraping bowl constantly with rubber spatula. Increase speed to medium, beat for 3 minutes scraping bowl occasionally, until well blended.
Drop batter by heaping teaspoonfuls onto cookie sheets about 1 inch apart. Bake 8 to 10 minutes until cookies are puffy and slightly cracked on top. Cool


Frost cooled cookies with

1 1/2 cups powdered sugar sifted
1/4 cup butter softened
1/8 teaspoon salt

Mix until light and fluffy, Then add,

1 1/2 squares unsweetened chocolate melted
1 to 2 tablespoons milk
1 teaspoon vanilla extract

Mix until well blended


My family loves these cookies and the frosting has many uses. You may top them with a pecan half if you like. ENJOY!!

CHEWY CHOCOLATE COOKIE

1 1/4 c. butter, soft
2 c. sugar
2 eggs
2 tsp. vanilla
2 c. unsifted flour
3/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
2 c. peanut butter chips

Cream butter and sugar. Add eggs and vanilla; beat well. Combine flour, cocoa, baking soda and salt. Gradually blend into creamed mixture. Stir in chips. Drop by teaspoon onto ungreased cookie sheet. Bake at 350 degrees for 8 to 9 minutes. Do not overbake. Cookies will be soft, they will puff while baking and flatten while cooling. Cool slightly, remove from cookie sheet.

Chocolate Blossoms made with HERSHEY'S MINI KISSES Brand Milk Chocolates
Ingredients:
1 cup (2 sticks) butter or margarine, softened
1-1/2 cups sugar
2 eggs
2 teaspoons vanilla extract
2 cups all-purpose flour
1/2 cup HERSHEY'S Cocoa
1/2 teaspoon salt
Additional sugar
1-3/4 cups (10-oz. pkg.) HERSHEY'S MINI KISSES Brand Milk Chocolates
Directions:
1. Beat butter, 1-1/2 cups sugar, eggs and vanilla in large bowl until fluffy. Combine flour, cocoa and salt; gradually add to butter mixture, beating until well blended. Cover; refrigerate dough about 1 hour or until firm enough to handle.

2. Heat oven to 350°F. Shape dough into 1-1/8-inch balls; roll in sugar. Place on ungreased cookie sheet.

3. Bake 8 to 10 minutes or until set. Remove from oven. Place 3 chocolate pieces on each cookie, pressing down lightly. Remove from cookie sheet to wire rack. Cool completely. About 4 dozen cookies.

yum easy chocolate cookies

4oz (125g) butter
1/2 c sugar
1/2 c brown sugar
1/2t vanilla
1 egg
1 3/4 of self rasing flour (i use wholemeal)
1/2t salt
4oz (125g choclate chips or chuncks
2oz (60g nuts optional

cream butter and sugars and vanilla
add egg and mix
and flour and salt...... mix
add chocolate and (nuts if using)

shape into small balls and place on a greased tray
allow for speading
bake in moderate oven 180'c
for 10 15 minutes
makes about 30ish
