I want to grow my own peppers and make my own pepper sauce, you know the kind you buy at the store that are in a jar packed in vinegar, and you put the pepper sauce on your turnip greens?

Green Tabasco peppers or other small peppers picked whilst green. My Dad used to make them. 3 c Distilled white vinegar
2 lb Cayenne OR Jalapenos whole if small is best
2 ts Salt
Simmer vinegar, salt and peppers at least 5 minutes. Process in processor. Store in a glass bottle. Put in a dark cabinet and let age at least 3 months. Strain when ready to use.

You want to use your small ornament edile peppers. Theey are small and can fit inti small jars. I know what you are talking about,love pepper sauce on my greens,p and blackeyed peas with corn bread. Chayenne or habeneros are to big and to hot. You want just enough h eat,but not to overly powering,that you can't eat your food.

I think Serrano peppers, but you can use any peppers that you want. Mix them up or use just one variety, experiment. Habaneros unless you want it blistering hot, would be a little much, maybe just one habanero.

Try cayenne peppers, they will work best.
