I have just been giving a new position with my hotel to come up with a menu for our poolside Teke Bar!! I have some ideas but need some more. The hotel has about 90 rooms and really New to the Daytona Beach area shoreline. Can you help me bring light, colorful cost effective food ...yet interesting food to the pool. I am use to serving 4-5 star food but we aren't there yet. Any good ideas would be helpful! Thank you!

Tiki bars make me think of kitsch-y 50's style, but past experiences with my grandma's Betty Crocker books from that era tells me that might not be the best direction. But if you could combine the looks of kitsch-food (Oh, wouldn't that be a hell of a movement? Micro-gastronomy watch out! lol) with good flavor, it could turn out really cool.

Although you might end up attracting a ton of hipsters on accident.

For a tiki bar, I'm guessing you already have the little tiki-head glasses and coconut cups to serve those drinks out of... So I'll let you take care of the drink front. But if you do end up attracting the hipster crowd, I suggest you also stock Miller High Life and Pabst Blue Ribon. Trust me. ;)

It's going to take me a while to get some recipes together, but I have some ideas. Give me until tomorrow at the latest before ya pick, kay? I promise there won't be any pineapple-ring topped meatloaf, lol. (Maybe.)

Chicken, or beef, or pork, or prawn Satay
Meat which is marinaded and then slipped onto bamboo skewers and quickly broiled or grilled and served with a snappy dipping sauce.

This is a quick, yummy Indian snack food. It's appealing to all ages and tastes as it is exotic but approachable for those who are interested in trying something slightly different but not stray too far away from their "comfort" zones.

It's pretty cost efficient as it takes few ingredients, it can be made ahead and frozen in portion quantity, thrown on the grill with some fresh marinade and quickly served.
