I find black/white/gray allows you to focus on the subject, not the color fluff! And so many media don't even deal with color like sculpture, etching, clay, etc. Focus on the many many media they can use and the beauty they can create instead of worrying about what YOU think they can't see. I bet they can see more shades of gray than you can of colors! Help them explore!
