Does anyone have simplified recipes calling for over ripe bananas? All of my recipes that call for over ripe bananas are time consuming & require a lot of other ingredients.

I would say banana bread pudding. It's easy. Just cut up cubes of day old bread, soak them in an egg bath (mixture of egg, milk, a little sugar and vanilla extract if you have some on hand). Slice up the ripe bananas and mix them into the bread mixture. Add in some nuts or dried fruits for texture if you want. Butter up a dish and pour the mixture in. Place a few pieces of butter on top as well. Then bake the dish in a preheated 350 degree oven for about 20-30 minutes or until it's golden brown. Enjoy!

RIPE BANANA CAKE

3 c. sifted flour
1 tsp. cinnamon
1 tsp. salt
1 tsp. baking soda
1 (8 oz.) can crushed pineapple with juice
2 c. diced ripe bananas
2 c. sugar
1 1/2 c. oil
3 eggs
1 1/2 tsp. vanilla

Mix all dry ingredients, then sift them together. Add bananas, oil, pineapple with juice, vanilla, and eggs. Stir all together. Do not beat - just blend. Bake in a greased and floured tube pan at 350 degrees for 1 hour and 20 minutes. Cool on rack before removing from pan.

When I have too many ripe bananas on hand, I just mash them, adding some lemon juice to keep them from turning brown. Measure out in 1 c. portions and freeze in containers. Then just defrost in the microwave whenever you need them for a recipe.

Make banana fritters. Make a batter sort of like pancake batter. Dip the lengthwise sliced bananas in it, then deep fry. Drain on paper towels. Sprinkle with powdered sugar.

Otherwise you can always make banana bread. Lots of recipes for it on foodnetwork.com

I just like to add them to the blender with milk, choc syrup or choc drink mix powder (Quick), & whip up a quick milk shake. You can add anything. Stawberries would be really great too.
