I brought some Haagen-Dazs ice creams a week ago. and when I opened it today, there were furry-looking little ice formations all over the surface of the ice-cream!

Why does this happen?

It's only ice crystals, your freezer is self defrosting so the ice cream gets soft and refreezes, to cure this simply put your ice cream container in a air tight freezer bag next time

It happens when Ice cream freezes... more. I believe its just more ice crystals, in a shaved texture. Because the temperature in the freezer is colder than the temp for ice cream to remain at a medium (cold enough to not melt, warm enough so it doesnt develop the ice crystals) but since freezers are colder than that, it will freeze the ice cream more, allowing more ice to develop.

It's still good to eat.The product has been in the freezer and air must have somehow gotten into the pkg.
Ice cream will do that at home once it's been opened and placed back into the freezer.

Condensation from when you on your way home with it (it melts a little). Then it forms and freezes again once you put it back in your freezer. Its totally safe to eat.

That's called freezer burn, son. Time to toss it. It will not taste fresh, if you don't care than eat it. Ice cream doesn't exactly have a long shelf life.

its just freezer burn... if your ice cream is only a week old i would still eat it... but anything over a month with freezer burn i'd throw out. sometimes you can tell if its bad cause the freezer burn makes it taste stale

Freezer burn. The lid wasn't closed tight or it's been in their freezer a long time. Won't hurt you but probably won't taste as good either.

I think that's what we call "freezer burn". Happens when something in the freezer gets exposed to the air and then is refrozen. (I think)
