There are a number of excellent books on grilling that include a lot of the basics - types of grills, grilling techniques, etc. One of our favorites is the Weber Big Book of Grilling. Check out the cooking section of your favorite book store or online at Amazon.com, etc.
For grilling times we use the cookout calculator at charcoalbob.com. Just enter the items you will be grilling and it gives you printable instructions for how to grill steaks, chicken breast, pork chops and the like. It also has grilling tips.
A couple of key things to know are that most recipies for steaks, boneless chicken breasts, pork chops recommend grilling over a direct medium fire (the meat goes directly over the heat source) with the grill covered (and all vents open on a charcoal grill). Allow steak and pork chops to stand at room temperature for 20-30 minutes before grilling, and allow them to rest for about 5 minutes after grilling to keep them nice and juicy.

turn on the gas light the burners and let heat up,so grease doe'nt spill on fire put aluminum foil on rack and spray with spam. Keep the fire low and use just like a fring pan on the stove. Want a little bit more flavor put some small green twigs on fire to get that smoky taste
