OMG! You and I are in the same boat. My son will turn 3 this Friday and has just about everything and we haven't even gotten through all of the Christmas gifts =) These are some of his favorites, maybe you can find something on the list your son doesn't have yet:
*Train set (Fisher Price - this is great b/c you can buy extender tracks and different stations (i.e. fire stations, helicopter pads, etc.) This really sparks his imagination.
*Tool set - He LOVES his tools especially the screw driver and hammer)
*Black & Decker Tool Bench - This is great also
*Medical Bag with medical equipment - Now this one he does not have yet. But he always plays with it at day care
*Moonbouce - his grandparents will be buying this for my son from eBay (http://cgi.ebay.com/ws/eBayISAPI.dll?ViewItem&sspagename=STRK%3AMEWA%3AIT&viewitem=&item=6024661425&rd=1&rd=1)
*VTech gaming system - educational and fun
*Plug and Play games

Another suggestion is, if he goes to day care, poll his teachers with what he plays with or enjoys the most while in school.

Go through his toys now, weed through all the babyish toys and toys he doesn't play with and suggest that he gives the toys to a homeless shelter, batters womans shelter for other little kids to play with. Now does he really have that many toys? If so and you don't want to buy a toy for him. Make a special Birthday Date day. Maybe he can pick where to eat. Pick to go to a park or maybe indoor swimming, buy him something small to open after all by three you know and understand that presents come with a birthday party. Another idea is to buy him movie ticket coupons. Maybe you can buy color book and crayons, sidewalk chalk, they have new sidewalk paint by crayola, Shovel and pail to take to the park or an outside sand pit. finger paint and paper add a little bit of dish soap to the finger paint eventhough is says comes off easy a little dish soap helps it come off faster.( We allow the kids to finger paint in the house however we bought a shower curtain and laid it on surface floor/ table.)

Books and clothes.

Also, my 3 yrd old boy got HULLABALOO for his birthday. Its a game from the makers of cranium. There are colored/shaped pads you spread around on the floor and there is a box that calls out "jump to this shape", "spin to this color". after a bunch of those, it yells freeze! and its like musical chairs/hot potato where the winner is on the right pad. Although my son only jumps around in circles and only follows the directions every now and then, its great fun as we are running all over the pads and jumping up and down. He takes great naps after this game! Plus they learn their shapes and colors...

Books are always good at any age! Since he has so many toys, maybe a toy box would be a good idea. Get one that is not painted yet and that can be his birthday present, you and him painting it together!

Is there anything that he is really into? Our 3 year old loves anything about planets and outer space. So we've gotten him pictures of planets to hang on his wall and books about outer space (there's a great one at Costco about Planets and Stars).

So if your son has any interests like that you could play them up with wall posters, books, movies, computer games, etc.

How about some books that seem interesting. Books about bugs, animals, superheroes etc. Anything your child is into, but he can look at through a book! Books at an early age promotes early literacy!

A giant box, like from a fridge or a TV or something. Usually it's free from like Best Buy and you can cut windows in it, or he can sleep in it, or read books in it, color it, paint it - whatever - it's his fort.
Of all the things we got our three year old, she still plays with my wife's fridge box more than her toys.

Get him a fort. They sell pop up forts at places like toys'rus. They're big, fun, and easy to put away when hes done, or you can get him something he needs like a kids table for coloring and drawing.
