1. Cook and drain the pasta; set aside.
2. In a skillet, heat olive oil to sizzling, about 2 tablespoons.
3. Toss in 1 teaspoon grated garlic from a jar or 3 chopped garlic cloves; sizzle till they start to brown.
4. Toss in 1 pound shrimp; you can use shelled or with shells.
5. Cook, stirring, till shrimp are barely pink.
6. Add a sprinkle of basil and a half teaspoon of salt; stir.
7. Mix in the pasta; stir.
8. Serve with garlic bread.

To make shrimp scampi (my favorite shrimp/pasta dish), for 2 or 3 people, get 1 lb. of fresh med. sized shrimp and remove the shells.
Put the water on to boil for your pasta (a large pot of water and about 1/2 palm-full of salt).
Peel and crush 2-3 cloves of fresh garlic. Juice 1-2 fresh lemons (depending on their size and juiciness). Finely grate fresh parmesano-reggiano cheese (about 1/4 cup). Open a decent bottle of dry-ish white wine- (have a glass and keep some handy for finishing the dish).
When you put your pasta in the rapidly boiling water, turn on your broiler and put your largest saute pan (preferably one without plastic handle- if it has plastic handle, wrap it in foil before you put it under the broiler) on the stovetop to melt 2 Tblsp. of butter. Add about 2 Tblsp. of EVOO (extra virgin olive oil) to the butter, turn the heat to fairly high and add the shrimp. Cook for about 1 minute and then remove from the heat and turn each shrimp over. Put under the broiler for about 1 minute- (shrimp should be pink in color)- DON'T overcook it!
Take out of the broiler and return to the burner. Add the crushed garlic, and about 1/2 cup of wine and saute for about 1/2 minute. Turn the heat off and add the lemon juice and the grated cheese. (NOTE: if one of your dinner guests can't do alcohol, you can substitute about 1/4 cup of chicken stock for the wine).
Serve over pasta (linguini or angel hair are my favorites for this recipe) and top with some additional cheese and some chopped fresh parsley.
This is one dish that will make you a hero! It's delicious and relatively easy and healthy.
