I was a toll booth operator.I used to bring an empty gallon water bottle,and use that.It would last a good 5 days before it would need to be emptied.Unfortunately It split inside my car once,it took many weeks for the smell to leave.Still,on the plus side that was the wifes/passenger seat!

Astronaut diapers. Actually they would get relieved by another,if alone then they would go quickly inside the main building. If not, the forest seems to be the right thing to do. Good question by the way.

They call the supervisor who sends a relief operator, additionally they have periodic breaks every two hours, depending on the State where they work.

They wear those Depends-type diapers. Or if they don't have any, those doors close half way up so you can't see in, and their seat is really like an outhouse, they can pee and poop without you knowing since they are up much higher than you are.
