Significant other....

Well does that mean chances are they're not heterosexual?
Instead of a girl saying my boyfriend..or girl saying boyfriend...if a girl says my s/o or boy say that could that mean they mean a person of the same sex?

Usually, it's a guy. It doesn't matter. I mean if they are lesbo, then it would be a girl. But if not, it's most likey a boy. It means your "sweetheart". I hope that answers your question.
BTW I think it's just another word for the one you like/ your bf

No. Sometimes people just say that due to preference of words. Like when they don't want to give away the identity of the person in a conversation.

no.... my gf has called me her significant other before. not to me... that would be kinda weird, but tlaking about me once in a while
