Four Cheese and Italian Sausage Lasagna

Make this lasagna vegetarian by leaving out the meat.
This is a double batch of sauce because it is nothing short of amazing

Sauce
2 tablespoons olive oil
2 cups chopped onion
1 ¾ cups finely chopped peeled carrots
4 tablespoons minced garlic
1 lb. lean ground beef
12 ounces spicy Italian sausages, casings removed
2 28-ounce cans crushed tomatoes with added puree
1/2 cup tomato paste
1/2 cup chopped fresh basil
2 tablespoons brown sugar
2 tablespoons dried oregano
2 bay leaves
2 teaspoons dried crushed red pepper

Lasagna
15 lasagna noodles
2 15-ounce containers whole milk ricotta cheese
1 cup grated Parmesan cheese
3/4 cup Fontina cheese
1 10-ounce package frozen chopped spinach, thawed, drained,
squeezed dry
2 large eggs
4 3/4 cups grated mozzarella cheese [about 1 1/4 pounds]

For sauce
Heat oil in heavy large saucepan over medium heat. Add onion, carrots and garlic; sauté until softened, about 12 minutes. Add beef and sausages to pan; sauté until cooked through, breaking up meat with back of spoon, about 5 minutes. Add remaining ingredients. Cover and simmer until flavors blend and sauce measures about 10 cups, stirring occasionally, about 15 minutes. Discard bay leaves. Cool.

For lasagna
Preheat oven to 350°F. Cook noodles in large pot of boiling salted water until almost tender, about 7 minutes. Drain; cover with cold water.

Combine ricotta, Fontina, and 3/4 cup Parmesan cheese in medium bowl.
Mix in spinach. Season to taste with salt and pepper. Blend in eggs.

Drain pasta and pat dry. Spread 3/4 cup sauce over bottom of 13x9-inch glass baking dish. Place 5 noodles over sauce, overlapping to fit. Spread half of ricotta-spinach mixture evenly over noodles. Sprinkle 2 cups mozzarella cheese evenly over ricotta-spinach mixture. Spoon 1 3/4 cups sauce over cheese, spreading with spatula to cover [sauce will be thick].

Repeat layering with 5 noodles, remaining ricotta-spinach mixture, 2 cups mozzarella and 1 3/4 cups sauce. Arrange remaining 5 noodles over sauce. Spread remaining sauce over noodles. Sprinkle remaining 3/4 cup mozzarella cheese and 1/4 cup Parmesan cheese evenly over lasagna. Can be prepared up to 1 day ahead.
Cover tightly with plastic wrap and refrigerate.

Cover baking dish with aluminum foil.
Bake lasagna 40 minutes; uncover and bake until hot and bubbly,
about 40 minutes. Let lasagna stand 15 minutes before serving

Slow Cooker recipe:

Taco Soup
Makes 8 servings

1 pound ground beef
1 envelope dry ranch dressing mix
1 envelope dry taco seasoning mix
3 12-ounce cans rotel tomatoes, undrained
2 24-ounce cans pinto beans, undrained
24-ounce can hominy, undrained
14.5-ounce can stewed tomatoes, undrained
1 onion, chopped
2 cups water

1. Brown meat in skillet. Pour into slow cooker.
2. Add remaining ingredients. Mix well.
3. Cover. Cook on low 4 hours

Notes:
1. Increase or decrease the amount of water you add to make the dish either stew-like or soup-like.

2. A serving suggestion is to line each individual soup bowl with tortilla chips, ladle taco soup on top, and sprinkle with grated cheese.

Freshly baked bread. Or, put some butter, vanilla and cinnamon in a pie plate and heat it in the oven. Your house will smell like a Cinnabon castle.

I love pulled pork...southern style...homemade macaroni and cheese, corn on the cob, butter beans, Texas Toast and a big glass of sweet tea.

Sweetie,there are so many delicious meals.Yum! Here are a few recipes:

Better than sex cake(I tweaked it just a bit,but i actually made it like this)
1 Chocolate Cake Baked( I used Yellow,and prepared from a box)
1/2 Cup Fudge Topping
1/2 cup caramel topping(You can use butterscotch but the caramel is best)and its the kind you get for like ice cream same for the fudge topping.
1/2 cup sweetened condensed milk
butterfinger candy bars
1 tub of cool whip( i actually used half)
a hand full of flaked coconut(optional)

After the cake has cooled from baking it poke holes in the top of it with a fork or the handle of a wooden spoon(i like to use a bigger fork). pour the fudge on top of the cake (I like to heat mine before i do it).Let that soak in a bit,then pour the caramel sauce(i like to heat this also) let that soak in a bit as well.Then pour the condensed milk over the top of the cake letting that soak in as well.crush half of the candy bars( i used three,so i used 1 1/2 for this part),and sprinkled them over the cake.Then sprinkle the coconut over that.Next spread the coolwhip over top and finished it off by sprinkling the remaining candy bars.

I made this in an aluminum pie pan.Thats why the ingredients dont look like that much,you can adjust to the size of your cake.It doesnt require exact measurements.

Pizza Pasta bake(I usually make it without the meats,but this is the original)
1 (12 ounce) package uncooked elbow macaroni
1/2 pound mild Italian sausage
1/2 cup chopped onion
1 (14 ounce) can pizza sauce
1 (8 ounce) can tomato sauce
1/2 cup milk
1 (3.25 ounce) package sliced pepperoni, cut in half
1/4 cup sliced fresh mushrooms
1/4 cup sliced black olives
1/4 cup chopped Canadian bacon
1 cup shredded mozzarella cheese

Preheat oven to 350 degrees F (175 degrees C).
Bring a large pot of lightly salted water to a boil. Stir in macaroni, cook for 8 to 10 minutes, until al dente, and drain.
In a skillet over medium heat, cook the Italian sausage and onion until sausage is evenly brown and onion is tender. Drain grease.
In a bowl, mix the pizza sauce, tomato sauce, and milk. Stir in the sausage and onion, pepperoni, mushrooms, olives, and Canadian bacon. Gently mix in the cooked macaroni until evenly coated. Transfer to the prepared baking dish.
Cover, and bake 30 minutes in the preheated oven. Remove cover, top with cheese, and continue baking 15 minutes, until cheese is melted and bubbly.


Penne alfredo bake
1lb penne pasta
1 1/2 cups of parmesan cheese,grated
1 cup mozzarella,shredded
1 cup heavy cream,half and half,or milk( i prefer cream its alot richer
salt and pepper
1/4 cup chopped parsley
Cook pasta to desired bite.Drizzle extra virgin olive oil into a casserole,or baking dish.Pour cream,parmesan cheese,salt,and pepper,and parsley.Stir to combine.Bake at 350(make sure you preheat your oven),for 20 minutes.This will make the sauce top off with mozzarella,and bake uncovered for 3 minutes,until cheese melted,broil until golden.Yum!


Easy Tortellini bake
1 (9 ounce) package cheese tortellini
1 (24 ounce) jar marinara sauce
1 (16 ounce) jar Alfredo sauce
1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
1 tablespoon dried Italian seasoning
1 (8 ounce) package shredded Mozzarella cheese
1/4 cup freshly grated Parmesan cheese
1 teaspoon dried Italian seasoning

Bring a large pot of lightly salted water to a boil. Add pasta and cook according to package directions; drain. Adjust oven rack to the highest position and turn oven on to Broil. Generously butter or grease an 8x8 inch baking dish.
Bring marinara and Alfredo sauces along with spinach and 1 tablespoon of Italian seasoning to a simmer over medium-high heat. Reduce heat to medium-low, and simmer for 10 minutes. Stir cooked tortellini into sauce, then pour into prepared baking dish. Sprinkle with Mozzarella cheese, Parmesan cheese, and remaining 1 teaspoon Italian seasoning.
Broil for a minute or two until cheese has melted and turned golden brown.

All these dishes are wonderful.Nothing takes the cake like pasta,and hearty meals that make your mouth water.Good luck hun,and have a good day!!
