more accurate: fish roe.

Why we only eat some caviar from really small collection of fish, particularly which I only known of is sturgeon?

Could we make caviar from all fish?
Would they taste the same?

Only female fish since caviar (roe) are fish eggs to make baby fish and those only from fish who spawn eggs.
Roe range widely in size according to which fish it is from. Flying fish roe, which is very tiny, is often used in "inside-out California sushi rolls).
Salmon roe is much larger and is orange, about the size of a green pea.
So you can see how different they can be, They will all have different flavors as well. Obviously the sturgeon roe is the most prized (beluga caviar).
But all of it is edible and all from girl fish.
Japanese probably eat more caviar than anyone. Not that they are more sophisticated. But their idea is to use "all " of a thing, including fish heads, fish guts, fish bones, fish fins, and so on.

All (female) fish have eggs, all eggs are not caviar.

If any fish egg could be caviar, it wouldn't be the expensive delicacy that it is. Anyone could raise fish in a home aquarium or pond and gather their own caviar at will.

I have not heard that any fish eggs cannot be eaten (although it's possible) but just as different fish have different flavors, so would the eggs. Apparently not many have been found to be palatable enough to be considered on the level that caviar is.

they don't all taste the same. True caviar is from sturgeon. ossetra, sevruga, or beluga (not the whale). Sterlet is a rare variety. Salmon roe is commonly sold in most grocery stores, but is labeled as roe, not caviar. Most fish is farmed these days, rendering the roe tasteless. Its the salt from the sea that makes it so flavorful. Overfishing and pollution have contributed to the decline in quality caviar, like most other foods.

No, just like some animal eggs, some fish eggs taste good and some types taste awful. As you've stated, only certain types of fish's eggs are considered "caviar". Yes, you could make caviar from any fish eggs, but it tastes terrible (compared to regular caviar, that's really saying something).

Caviar is fish roe. What makes caviar special is the fish it comes from. There are different "grades" of caviar and the flavor differs from fish to fish.

Yes all fish have caviar, but there will be difference between all types of caviar according to fish type. It is true that beluga caviar is the most delicious caviar in the world and I think all fish gives caviar and they are eatable. But their taste makes difference between other types of caviar.

No..... the only one I know which is absolutely great is Shad Roe
which is available in the spring of the year (at any rate .... here is the norteastern US where I live) ... it is done rather quickly under the broiler and is served with rashers of bacon, wedges of fresh lemon ... and maybe some boiled potato with parsley ...

Oh, yes: it does not taste the same at all .... the caviar from Sturgeon is dark and very fishy and oily, and is 'loose', as I am sure you know, but the Shad roe is light in color and all in a shape like a flat filet ....

Every fish has roe and its all edible (in that none of it is poisonous!). Even within the caviar family, flavours vary greatly. Caviar from the beluga sturgeon is supposedly the best but when i had it once it made me throw up

All females have caviar. I know that the caviar of some fish, because, of course, they are all over the world, has a large import / export tax. That would make availability, depending on US. relations, hard. As long as you have fish eggs, you can make caviar, but it would taste as different as the fish it comes from. As there are different fish varities, there are different tastes of them.

all fish have eggs, but caviar is a name given to the specific types of fish that produce excuisite quality of eggs, and are very expensive to buy, they do sell multiple kinds but to try it with any fish just wouldn't be the same, there is a difference between roe and caviar grade, now there are a lot of things you can do with the roe of fish i suggest you check out some of those recipes
