i remember making potato salad this way about 5 years ago but can`t find my recipe...i think the recipe also called for chopped green chiles, but i can`t remember the other ingredients...HELP!!!

Southwestern Potato Salad

Ingredients
2 pounds red or white potato
1 cup southwest flavored ranch dressing
1 tablespoon chopped jalapeno chile
2 tablespoons chopped cilantro
1 teaspoon lemon zest
1/4 teaspoon salt
1/4 teaspoon white pepper
1 cup diced jicama
1/2 cup sliced black olives
1/4 cup scallions
1 pint cherry tomatoes
1 avocado, sliced
1 tablespoon fresh lemon juice

Method
Simmer potatoes in lightly salted water for 15-20 minutes, until tender drain, rinse, drain well, and set aside to cool combine ranch dressing, chiles, cilantro, lemon zest, salt, and pepper combine potatoes, jicama, olives, and scallions pour dressing mixture over potato mixture-toss to mix well cover and chill for 2-24 hours add tomatoes-toss lightly to mix slice avocado and sprinkle with lemon juice arrange on top of salad as a garnish serve chilled

6 — 8 Medium to Large Red Potatoes
1 large bottle of Hidden Valley Ranch Dressing
1 bunch scallions, chopped
1 can chopped green chiles
1 can corn drained
1 pound bacon, cut into small pieces before cooking
Wash potatoes, cut into quarters (bite size) and boil with “skin” on.
Cool potatoes while frying bacon extra crisp.
Drain off bacon fat and soak up extra grease with paper towels.
Mix cooled potatoes with bacon, scallions , chiles, corn and dressing.
Add salt and pepper to taste.
Chill for 2—3 hours.

i'm not sure what recipe you had but i'll give it a shot
bake off about 8 potatoes and let them cool, after they are cool scoop out the pulp in chunks and cut them into 1/4 inch squares
in a mixing bowl add 1 cup of peas, 1/4 cup of fresh chopped onions, 1/2 cup of chopped bacon, 1 cup of ranch dressing, and a 1/2 cup diced hardboiled eggs, and if you want you can add about a 1/4 cup of parsley to bring out the color a little more

mix it all together and then add in your potatos


another great recipe is for a german potato salad, use potatoes, 1/2 cup chopped red onions, 1/4 cup of sugar, 2tbs. black pepper, 1/2 cup of parsley, 1/2 cup of bacon, and 11/2 cups of hot bacon dressing, this one is delicious

get the recipe for it and substitute mayo for the ranch dressing.
