I really do prefer wings simply prepared. I don’t bother with soaking or seasoning or flouring the wings before frying. The point is that the skin is crispy, the meat is tender and the sauce is lick your fingers good and hot. What’s that phrase? "Keep it simple stupid".
Too, it’s easier to make a ton of these when they are prepared simply.
Ingredients
24 chicken wings
1/2 cup unsalted butter
1 cup Louisiana Brand hot sauce
vegetable oil for frying
Method
Cut tips off wings and discard. Cut remaining chicken wings in half at the joint. Deep fry them in about 2" of oil in skillet until done. Drain.
Melt butter and hot sauce together. Dip fried wings into the sauce.
Serve with your favorite blue cheese dip or dressing

I believe the Anchor Bar method is to deep-fry them until crispy and done, and toss them in a mixed sauce of Frank's/Crystal hot sauce and melted butter.
Prep your wings by cutting the 3 joints apart and discarding the wing tip (or saving them to simmer into a nice chicken broth for later).
They shouldn't be breaded. When mixing the sauce, as mix it when you just melt the butter. You won't ned to heat the hot sauce if the butter is hot.
Serve with celery sticks and blue cheese dressing.
I always have mine this way.
Of course if you want to do the 911 thin, add cayenne pepper to the sauce instead of a different hot sauce so the basic flavor doesn't change but only gets hotter.
And have tons of napkins handy! Eating hot "Buffalo" wings is dirty work, but somebody has to do it! (I will volunteer any day!)
(Anchor Bar is in Buffalo NY; has nothing to do with large hairy animals of the American West)
Plan on 6 per person as an appetizer; 12-15 as more of a meal. Pieces are counted as the joints separated, not the whole wing!

Bake at 350°F for about an hour (or just until wings are thoroughly done). Dip wings and celery into blue cheese dressing and enjoy.
