A sandwich pick is one in between the first and second rounds. They are given as compensations for teams who lose top free agents. MLB sorts the free agents into Type A, B, and C. The best being A. If a team loses a Type A free agent, it receives the first round pick of the team acquiring the fee agent and a supplementary sandwich pick. Type B free agents only give their former team a sandwich pick, while Type C free agents return nothing.

They're called 'sandwich picks' because they happen in between rounds (this is in contrast to football, where one team would receive draft picks FROM another team; here they just materialize) rather than in the rounds themselves. Between which rounds depends on the free agent, and I think the value and length of the contract he signs with his new team.
