The liquid in the bottle (beer) seems to have been supercooled beyond its freezing point. The temperature of the beer was lowered below its freezing point, but nothing allowed the liquid to start to crystallize and freeze. Then by hitting the bottle against the table, this delicate state of supercooling was disturbed and the liquid immediately began to freeze.
The trick is to be very careful when cooling the liquid; one must use a very smooth container and cool it without disturbing the liquid until you want it to freeze (see how carefully the guy was holding the bottle before he knocked it against the table).
