I don't know about fish, but I can give you a few simple guidelines with the red meat.
If you're having filet mignon, the best is a Cabernet Sauvignon. The beef will make your mouth water, and the Cabernet is peppery, and will dry your mouth out a little - it's a great combo.
Most other steaks, you can usually get away with a Pinot Noir, or a nice Merlot. Even people who don't drink much wine, are usually OK with the taste of a Merlot.
And of course for Italian dishes - veal piccata, spaghetti and meatballs, etc. - you can't go wrong with Chianti.
