I always wish and sometimes try to dream about a certain subject or whatever, and instead will dream about something entirely different.

Are dreams the deepest form of sleep, and can you control what you dream about?

Yes, it is called lucid dreaming. Not everyone can do it, it has been suggested it can be learned. People don't have the same experience with it.

I used to lucid dream, I could and would change the subject, conversations, direction, setting and characters in my dreams at will. I seem to have abused my power and my subconscious “killed” me in a dream when I was 8 despite my objection and I lost the ability to even remember my dreams for 14 years. So… you might not want to abuse it.

Yes!
I was introduced to this idea as a young child. My mother taught me about using your dreams as a tool to get to elusive answers.
As an engineer I run into problems in need of solutions as part of my job. I practice meditation as I'm going to sleep, that regularly leads to dreaming about the subject at hand.

One helpful hint, don't try to force it (if you find yourself losing sleep over it your forceing it), just practice reularly and it will come.

You can influence a dream as it takes place. I don't think you can force yourself to dream about a particular subject. Dreams have a way of expressing your thoughts in ways you normally would not consider.

I really don't think you can. I've tried to do that too, and I've not even been close. I have noticed, however, that the more sleep deprived I am (I'm not recommending that), the more likely I am to dream about exactly what's on my mind. So, I guess it's in the planning..............................
