Buterflies have three stages to their life eggs, catterpilar and adult. Mammals have one that is born ands gow with no changes to its appearance or phisiology. Birds have two eggs and hatch then grow to adult. Amphibians have three, egg, tadpoles and adult. So as with most reptiles the tortoise would have two.
The tortoise is born from an egg then grows to adulthood without changeing appearance at all.

Egg

Hatchling... can be considered a stage by some definitions since they live and eat a little differently than the adult.

Yearling... same as above

Juvenile... not yet sexually mature

Adult


Once hatched, a tortoise changes as it grows only a little, so the 'stages' are not clearly defined... even if they are really different stages.
