I found that my daughter loved certain types of vegetables... she hated some pumpkin, but she loved butternut, especially when it was fresh. She loved carrotts and stuff...
I went and bought a puree wand thing and I would feed her pretty much everything. If we had steak and vegetables for dinner, I would puree the whole lot for her and she would go nuts over it...
She loved combinations of foods more than one single food... like she loved pumpkin and wild rice together... chicken and vegetables...
By the time she was 6 months I had consulted with her GP and had started giving her more exotic stuff... like I would add some gravy to her pureed meat for flavour... her favourite meal was a weakened buttered chicken...
Maybe try experimenting with different food combinations and flavours?

Well, solid food is really just for experimentation at this age anyway. But my kids started out on veggies (not refined starch) and they loved sweet potatoes, squash, broccoli and, get this... Artichokes?-)
Have you tried smoothies, as another person suggested? Also, most babies seem to love avocados (okay, technically a fruit, but full of yummy fats that a baby needs to grow.)
My 2 y.o. is a picky eater and i cannot trust him to like the same foods two days in a row, its infuriating. He loooved grapes and was begging for strawberries last week, yet he wanted nothing to do with either at a friend's house today.
He loves salsa though, so i try to give him fresh salsa as often as possible, its got lots of yummy tomatoes.
i would say its far to early for a label such as "picky eater" He is still very young and such a label may well become a self-fulfilling prophecy.

Have you tried making your own baby food? Sometimes the stuff in a jar is just so god awful and could choke a donkey! I stopped even attempting baby food from a jar when I tried the green beans and they tasted nothing like the green beans my husband and I eat.
Also, have you tried giving baby things in a mesh feeder, like raw carrot, pieces of green beans cut up, tomato (might watch out for the acid, can cause a diaper rash), avocado like a previous poster said is full of good fats, peas (these are good for working on fine motor skills), and other finger foods. Sometimes baby just wants to feed himself. I know my daughter started an independent streak around that age, so we usually put some Cheerios on the tray in front of her and fed her with a spoon, that way she got to control a small aspect of her meal, and the different textures were probably nice too (crunchy and mushy.)

Have you tried giving him fresh vegetables instead of from a jar? You can boil/steam the veggies and then mash them down and add in a bit of milk or cereal.
Sometimes it takes several tries of a certain food before a child will like it.
Also, let him try to "feed" himself. We thought my son was a picky eater, it just turned out he refuses to let others feed him. Makes a mess but it might actually get a bit of food into his mouth.

Tomato's , peas, corn :)
try making a smoothie of some sort.
Banana strawberry, and carrots...as an example. .. also they make some freeze dried fruit bits for baby's they think its like a cracker or puff :)

at 71/2 months your just lucky he is taking alot of solids my daughter didnt start on solids until 8 months but we started her on veggies and then started working her into other things like fruit. she is 10 months now and yesterday a gave her a bite of my little debbies brownie. she loved it. :)

Try mixing the vegetables with fruit this is what I do with my baby.Or I just mix the vegetables in the food when I don't have any dessert.

I think you should give him a supplement for the vegetables.What I mean they have also drinks with vegetables for babies.Yes carrots and green peas.
