I have grown plants from sprouted potatoes several times, but am never sure when to harvest. I dug under the dirt (my last attempt) and saw a bunch of tiny potatoes so I covered them back up and waited a few more weeks. When next I checked, they were all gone, decomposed I assume.

Potatoes like nitrogen rich dirt. Lots of compost. Use cuttings with eyes. Mound them as they grow. As they sprout leaves, add more dirt to them covering half of the stems. Let grow 6" and mound them, repeating as they grow. When they flower the potatoes are ready for digging. good luck
