Your stomach produces a special secretion of a substance that helps cover the cell walls from HCL and Peptic Enzymes. One of the drugs often prescribed for people lacking these substance is called Octocasinol (commonly found in certain vegetables like spinach). The second reason is because the stomach empties its contents something like every three hours into your intestines (an alkaline environment which neutralizes the acid from your stomach. Furthermore, your body is constantly reproducing new cells all the time as long as you are alive so any cells that get accidentally digested should get repaired to replace the other cells if you do not have any diseases or disorders.

The epithelial lining of the stomach has embedded one cell glands called Goblet cells that release copious amounts of mucus that coats the surface of the stomach. The HCl eats at this instead of the stomach lining. Additionally, epitHelial tissues are constantly undergoing mitotic cell division to replace the surface cells that do get destroyed. This cell division takes place at the basement membrane of the epithelium, pushing the older cells towards the apical surface.

Sometimes these are not enough, however, if an individual secretes too much HCl, or if the Goblet cells do not produce enough mucus. When this happens the individual can develop what is known as an ulcer, which is a hole in the lining of the stomach produced by the eroding away of the epithelial lining by excess HCl.

The cells in the stomach lining produce just enough HCl to breakdown the food there. Not enough to digest the the stomach.
