Birds have to eat alot to afford the energy required for flight; hince the droppings. Also, their bodies try to keep them light so they can fly, so they don't ruminate their food as much as mammals.
Another interesting fact about birds is that they never urinate. All of their bodily waste goes out the same place as a solid (or simi-solid). So what you call bird "poo" is also bird "pee"!

It's true that birds have only one exit for bodily waste. It's called the vent or cloaca. The white part of their droppings is like our urine, and the brown is like our feces. Birds poop so much because they have a much higher metabolism than people.
